London, October 2017: Royal Hideaway Corales Resort, a brand new hotel opening from the dynamic Spanish hotel group Barceló, has announced the appointment of Michelin-starred chefs Juan Carlos and Jonathan Padrón. Known as the Padrón brothers, the native Tenerife chefs will head up Maresía – the resort’s rooftop cocktail bar, restaurant and pool bar.
Sons of a chef and grandsons to a fisherman, Juan Carlos and Jonathan have lived in the kitchen since childhood and their passion for Canarian cuisine has only become more recognised. Award-winning local chef, Juan Carlos Padrón has received many accolades including a Michelin-Star in 2016, two Soles Repsol in 2011 and 2017 – a prestigious acknowledgement recognising the best restaurants in Spain as well “Chef de l’Avenir”by the French Académie International de la Gastronomie in February 2017. They are also the only chefs to specialise in Canarian cuisine and this new position will be the brothers’ debut role working together outside of their local restaurant.
With just fourMichelin-star restaurants in Tenerife, this dynamic duo will put Maresía on the foodie map. Sustainability is at the heart of Padrón brothers’ philosophy and they will seek to reduce the distance from farm-to-table by using local ingredients. This will conserve the nutritional value of the food produce and ensure a rich and wholesome flavour in all their culinary creations. Whilst Juan Carlos will be responsible for the main courses and Jonathan will be specialising in desserts, all dishes will be inspired by the local Canarian surroundings. Delicious creations from the menu include oysters served with a lychee vinaigrette; shrimps in a tapioca jus; Montesdeoca cheese ravioli with a lentil broth and aniseed and lemon yoghurt with toasted chocolate for those with a sweet tooth.

Opening in February, this stylish new resort is located on The Costa Adeje in South West Tenerife surrounded by an oasis of nature reserves. It is divided into two distinct areas with one designed exclusively for adults and the other to cater for the entire family. The whole hotel enjoys sea views and will celebrate the culture, food and design talents of Tenerife. The interiors are by local designer Leonardo Omar who has drawn on the surroundings and underwater sea life; the communal areas are inspired by the intricate formation of coral and will mirror its delicate formation and colour to raise awareness about the natural beauty of the marine world. The resort also offers a bespoke collection of local experiences to guests including paragliding through Teide National Park; deep see fishing and visiting the Cueva del Vientoto mention a few.
